For quite a while, my lunches have been salami, cheese, veggies with dip, and 1/2 sliced apple with peanut butter. To reduce carbs further, you could have berries and nuts instead of the apple and PB or just do more veggies.
This week, I am doing a spicy-ish chicken and veggie soup. Saute veggies (I used onion, carrot, zucchini, and bell pepper). I added a little flour (seasoned with chili powder, chipotle chile powder, garlic powder, cumin, Mexican oregano, and cilantro) to make a roux. Stir in broth/stock. Add cooked chicken, a can of diced tomatoes, and a can of beans (can be omitted to further reduce carbs). Simmer and season to taste. Can be served with sour cream and cheese to up the fat content. You can really do any flavor profile and to make a veggie-and-protein soup; Mexican flavors are just my favorite.
Chili.
You could do a side salad and a hot protein that reheats well, like meatballs or pot roast.
Stuffed peppers or zucchini boats.
There is a list of good no-lettuce salads on Yummly if you Google for that. A lot of those would be good with protein. I think next week, we are going to do a bite size caprese salad with chunks of chicken added in.

I'm a carbaholic and tried to cut back in the last year. almost every day for lunch I have either a turkey and cheese wrap on low-carb tortilla or salad with canned tuna.
