The Pioneer Woman's restaurant salsa is my favorite and is super easy to make. It uses canned tomatoes but you could easily substitute fresh if you wanted. The recipe reminds me of the salsa you get at Mexican restaurants but be warned that it makes a lot.
2 tomatoes, diced 2-3 avocados, diced 1 can black beans, rinsed and drained 2 cans "Mexi-corn", drained (or fresh corn kernels and one green pepper chopped very small) juice of one lime
This is a corn-based salsa, not tomato. It should be more yellow than red.
Serve with lime-flavored tortilla chips and you will be loved by anyone who eats it!
