I use Bob's Red Mill Scottish Oats, and have used his brand Steel Cut as well, both with good luck. I wonder if the "quick" steel cut is throwing you off? Not sure what makes them quick, but if they're partially processed then maybe the cooking time is too long vs. regular steel cut.
I only cook them plain, because MH doesn't like 'stuff' in his oatmeal (weirdo, lol!). After they're cooked I like just about anything. I've done pb and banana, honey, walnuts, raisins/craisins, half n half, any type of fresh fruit, even cottage cheese.

I've done steel cut oats (Bob's Red Mill) with this recipe. I'll also just do the oats the regular way (bring water and oats to boil, then simmer for 25 min)and pop it in to the fridge when it's done the night before so I can take whatever I want the next day. ETA: I've gotten to the point where I prefer steel cut oats, so I don't know anything about using regular oats.
