All my healthy adult life, I've been steaming broccoli, THEN adding butter or olive oil and seasonings. Last night, I decided to roast the broccoli with olive oil, salt, and pepper. It's SO MUCH BETTER. How did I not know this?
The Barefoot Contessa roasted broccoli recipe is the shit. It's got lemon juice and pine nuts and parmesan and stuff. I should make it again soon, actually.
Yep, my favourite way to eat many vegetables (broccoli, green beans, brussels sprout, carrots) is roasted with olive oil, lots of garlic, salt and pepper.
Plus, it's easy. You just toss everything together, chuck in the oven, then walk away for half an hour.
I roast vegetables twice a week. I make a mix of any of the following, cubed: sweet potato, butternut squash, potatoes (new or fingerling), parsnip, broccoli, and brussels sprouts. I use either bacon grease, butter, coconut oil or some mix of them with salt and pepper. Then we eat that with our piece of protein all week long.
