I neglected my garden for a couple of days due to the storm and now I have a bunch of giant zucchini. What can I do with it? I can only make so much zucchini bread!
We had this happen too! We picked 2 right before we left due to power outages and when we came back we had 5 more gigantic ones. I made 2 breads and froze one. We threw one on the grill with polish sausage. I'm doing a zucchini quiche type thing tonight. DH does a zucchini dip we're taking to a party Saturday. That used 3.
The next 2 got shredded and frozen. I found this recipe for zucchini tots. It calls for squeezing out the water. I figured out last year that freezing will release pretty much all the water. If I don't use it in that I use it in any time I make spaghetti sauce.
My mom often grates up the big ones (since they don't usually have as much flavor anyway), measures out how much she needs for a batch of zucchini bread and freezes the portions in ziplock bags. It works great - just thaw and strain out the extra liquid, the bread tastes great (no need to worry about the lost liquid)!

Stuffed zucchini. I use generally couscous, red peppers, feta, onion, garlic, golden raisins, and depending on the audience, ground meat (lamb or beef) or meat substitute crumbles, but I vary depending on what's on hand.

All of thes suggestions but do keep in mind that if it's giant, it's more than likely gone to seed. Still usuable, but if you want to shred, grate, use in breads, etc. you're going to want to scrape out the seeds. You can cut in half and scrape them out similar to any squash.
I recently had about 20 lbs of giant zucchini from my garden. I grated/froze16 cups, gave some to neighbors, make alfredo but subbed zucchini strands for the "noodles" (sauteed with onion/garlic) and made a few loaves of bread. Yum!
