I miss this a lot from when I lived in Germany and try as I can I cannot recreate to taste as good as it did there. If anyone has a recipe for this please post. TIA

I've never been to Germany, so I can't say how authentic this is, but it's the recipe I've always used:
2 slices bacon 2 tablespoons sugar 1 tablespoon all purpose/plain flour 1/2 teaspoon salt 1/8 teaspoon pepper 1/2 cup water 3 tablespoons vinegar (I usually use apple cider vinegar, but white whine and malt work equally well) 2 tablespoons thinly chopped green/spring onion 2-3 medium to large potatoes, diced 1/2 cup sour cream 1 teaspoon dijon mustard
Boil potatoes in salted water just until soft, drain and set aside. In skillet, cook bacon until crisp, reserving drippings. Crumble and set aside. Add sugar, flour, salt and pepper to reserved bacon drippings, cooking briefly over medium heat. Add water, vinegar, and onions, stirring until mixture thickens and bubbles. Add drained potatoes and heat through. Remove from heat, stirring in sour cream and mustard. Serve sprinkled with reserved crumbled bacon.
