So my summer vacation has come to an end. We go back to school tomorrow. Anyway, P is at a new daycare and they don't serve breakfast. On the days I have to drop him off I need to have us both ready and eaten breakfast and in the car by 7:15 so I want to have some easy things on hand so the kid doesn't have toast every morning. I have made a big batch of pancakes and egg muffins and froze them. What else can I make to keep in the freezer? we don't really have frozen pancakes and waffles that you can buy in the store here.
I can can make my own waffles. Can I freeze French toast?

Yes on all of that. You can freeze any of those things and heat them up easily in the morning.
What about some sort of granola that he can eat in the car? Oats, grains, dried fruit, etc. He'll stay pretty clean, and it's easy to clean out of the car.
Joshua has a granola bar and a fruit pouch on our way in. We have to leave at 6:45, so it gets tight. He never seems to mind, and if he skips one or the other, they have snack at 9, so he doesn't have to really wait.
french toast freezes well! You could cut it into strips also before freezing.
I struggle with breakfast. What kind of dairy free stuff do you guys do fusion?
Well we do gluten free for me and J also, so these might be a bit more complicated than you want. But I get a lot of inspiration from paleo websites since they are supposed to be gluten and dairy free by default. On the weekend we do scrambled eggs a lot just without any milk. Sometimes I add daiya cheese to his. I think those egg muffins would work well with the Daiya mixed in or just without cheese on them. I want to try some for the kids sometime. They eat sausage links a lot during the week with a side of some fruit. Another easy meal is oatmeal with just replacing anything dairy with a sub. I make a yummy bread from the Against All Grain blog/cookbook that is awesome for making french toast with www.againstallgrain.com/2012/05/21/grain-free-white-bread-paleo-and-scd/ I actually love everything I've made from her coobook and she makes every recipe with dairy free options. I've also made the donuts from her and they were delish. The recipes can be a little involved though if you don't like to bake. Most regular recipes you can just replace the oils and milks and they turn out fine. Udi's makes some yummy muffins from the frozen section. I'll usually buy a pack every once in a while for an easy breakfast treat. I make pancakes also that are good to freeze, just replacing milk with almond milk and oil with coconut oil these are gluten free too, but are yummy brittanyangell.com/extra-fluffy-coconut-flour-blueberry-pancakes-glutengraindairysugar-free/

Thanks fusion, we are in a breakfast rut. I really should get on the make ahead band wagon because duting the week a cooked breakfast is nearly impossible. I love the udis muffins..so much that I hide them from my kids! :-) I have to be careful though because they send my milk supply through the roof.

Most our breakfasts are unintentionally dairy free. We do a lot of the frozen precooked sausage patties with fruit (usually half of a banana or an orange). Eggs hardboiled, scrambled, or fried. Oatmeal with either raisins, craisins, or frozen berries. Dry cereal (we do milk in a sippy).
I just made some egg cups. Eggs, cheese, veggies, sausage. Mix together and pour in muffin tin. Bake at 350 for 20 minutes. They freeze well.
Also, I've heard breakfast burritos freeze well.
I wonder how these would be without cheese. Hmmm
I vote just fine. Honestly, I put about 1/2 of what the recipe called for and I can't even taste the cheese so next time I might leave it out to save some fat and calories.
