How do I cook steak in the oven?

We always do it on the grill, which is currently covered in snow.  And I'm too lazy and it's too cold out to clear it off.  So how do I cook it in the oven?

Sear it on high heat on stovetop. 30ish seconds per side. Stick it in the oven to finish for a few minutes.

We also use the Ina Gartner method but without the butter in the winter. Tastes great. Just remember to shorten up the cooking times for a thinner cut of steak.

I cook them under the broiler. How long and how far from the broiler depends on the type of steaks. For thicker steaks (my favorite are rib eyes) I usually do 4 minutes a side on the second notch and then a minute or two a side on the first notch so they get really browned on the outside.

Sear in a hot pan on the stove (preferably in melted butter) for 1-2 min per side. Stick pan under the broiler for 4-6 minutes to finish off. Tent under foil for 5 minutes.

I'm with snips - this is how America's test kitchen says to do it, and it's excellent every time. We've totally stopped grilling because this is so much better. Timing for me usually goes:

2 mins per side in a HOT skillet (not non-stick, you want to get a nice brown sear)

Pop it in a 375 degree oven for 6-8 mins

Eat.

Trust Alton Brown - this comes out perfectly and I cook it this way at least once a week. Coat steak lightly with veggie oil and salt and pepper.

Preheat your broiler with your pan inside (cast iron is best but anything oven safe will work)

When the pan is hot, turn on your burner on the stovetop and get it super hot.

Steak goes in hot pan on the stovetop for 30 seconds a side. Then in broiler for 2 minutes a side for medium rare.

Yes, Alton Brown's method is fool-proof. Just make sure that you have a good vent (otherwise your smoke alarms will go nuts) and your oven is calibrated.

As long as you don't use olive oil - or any other oil with a low smoke point, it isn't too smoky.  I use veggie oil and have hardly any smoke.

I use peanut oil, and if I let the pan heat up a tad bit more than usual, it releases a ton of smoke. Plus the vent hood in my old apartment did not vent outside and just recirculated back on top of the microwave. That didn't help matters either.

Alton Brown Method

Sear range top in cast iron and finish at 500F (bake, not broil)

I'm making filets tonight. I sear each side for 3 minutes and put under the broiler for 5 minutes.

I cook it on the cast iron skillet. I did one last night! Filet mignon, about 1.5 inches. I heated the pan medium-high heat, added oil to the pan, waited until it was very hot, added the meat (salted and peppered), 3.5 minutes on each side, covered. It was medium rare and exellent. It's how we do steak when it's too cold to grill.

Salt and pepper generously and pan sear on high heat to get a nice crust. finish off in the oven for a few minutes but don't dry it out.
