Yeah, anyways.
I am teaching from 4-10pm on Mondays. There is no microwave. There is no dining hall nearby. I have access to a sitting area for 10 minutes between classes to eat food. Oh, and I also run at 6am on Tuesdays.
What the fuck do I eat for dinner?
1. I sang that song in my head and dance a little in my chair 2. Human anatomy is a bitch of a class to TA, ugh 3. Do you have a fridge?

I'd do big lunches and snack dinners. You can do quinoa, rice or pasta (non-white flour based?) salads/bowls too, if greens-based salads are a problem. I'd make sure to have a snack right when you get out at 10 or in the car on the way home so that you're not so full it interrupts your sleep but are eating before your run.
Have you tried eating some dry cereal before runs? I don't eat before morning workouts usually, but if I know we're running a longer distance I'll have a handful of just cereal on my walk to the gym. It doesn't make me feel sick like eating a real breakfast (or drinking milk, barf), but I can tell the extra energy is helpful.
I have no fridge. I do however have the most adorable insulated lunchbox. I'm hesitant to bring a big salad because 1. Messy and 2. Lack of cupcake gallbladder + salads = unhappy cupcake tummy. Also cold chicken squicks me out. I know I know I can stare at a cadaver's pancreas all the live long day, but cold chicken in my mouth is just wrong. Sandwiches and pizza are also probably out, because if I ever find the time to see my PCP and get properly tested I'm pretty sure I would find out once and for all that I have an intolerance to white flour Doing the large lunch thing may be the way to go, you're awesome for thinking of that Runaways That's kind of what I did today, the girls in lab took me out to lunch as consolation that I have to do this and I had a decent lunch. The one thing I'm concerned about that though is if I eat lightly, I'm going to have nothing in the tank for my Tuesday morning run (and getting up an hour early to eat is not going to happen).
If it were me, I'd do a light meal at lunchtime, a big meal at like 3 or right before it's time to go, snacks during the evening, and then have some kind of meal ready to go when I got home late to help me fuel up for the next morning. Obviously we all eat and fuel a little differently though, so YMMV.

This is what I would do. Eat a big meal at 3:00 and then bring 2 different and easy snacks. I like larabars and soy cheese and crackers.

Sliced salami or sausage, sliced cheese, and nuts or trail mix. I'd eat a lot veggies with my lunch to get those in for the day and then do an apple and peanut butter after class. Salads and stuff sound great, but who can eat a filling one in 10 minutes? Not me!
What about a thermos of soup with some healthy crackers, quinoa salad, a wrap?
Would a thermos stay warm for like 10-14 hours?
Put the soup in a contigo. It'll stay warm.
I like NuGo bars for snacking when I need something on the go. The chocolate/pretzel/crack/heroin one is pretty tasty. And by that, I mean HOLY CRAP DELICIOUS. There's a lot of sugar so it's not something you should be eating 2-3x daily, but they're good for emergencies - I keep one in my purse at ALL times because I get cranky when I'm hungry. LOL
One of our fave quick dinners is a tempeh wrap, which I've made extras for next day lunch and they keep great (since you have an insulated lunchbox). We've taken these on hikes/bike rides too-
You can put anything on it, but my faves= Wrap of choice, hummus base, romaine, pan fried tempeh strips, mushrooms, red bell peppers, crumbly bleu, a little tahini drizzle, and any other veggies you'd like.

This is my Go-To: www.tasteofhome.com/recipes/italian-chicken-salad-sandwiches I like to eat is just on romaine leaves, but you could do a wrap. Similar "salads" seem like a good option for quick and easy, portable food. Apples, Pears, other filling-ish fruit Celery w/ PB or Almond Butter & raisins

I would have to have something that felt like a meal and wasn't too snacky or I'd feel hungry when I got home. I love cold frittas and you could have protein plus veggies. I'm also a big fan of mason jar salads or cold soups in mason jars. Easy to eat on the go.
Lots of good ideas! I just have a few thoughts to add...
Could you do a big sandwich on GF bread or a spinach wrap? Even if I'm getting a bunch of calories, I rarely get filled up if I'm only eating "snacky" things.
With only 10 minutes to eat, I'd then go for an easy to eat fruit/veggie like banana, grapes, carrot sticks. Then something with a lot of protein like a Greek yogurt, mixed nuts, string cheese or PB with your fruit. I'd think this would all keep fine in your cooler. Someone also suggested trail mix which is good for a bunch of energy/calories too. Good luck to you! I used to have a day like that in college with class until 9:30 & I ate terribly. Maybe a granola bar & then random leftovers for supper at 10 pm. Glad you are more proactive on planning.
