Have you considered renting an apartment? We did that on our last Paris trip and it was so much nicer than staying in a hotel.
We've always stayed in the Latin Quarter near St. Germain and Luxembourg Gardens. Convenient for the RER to/from CDG and always felt it gave us a relatively central home base.
We looked at hotels but decided on an apartment for our fall Paris trip. It comes out cheaper, and for a nicer unit. You also have the option of cooking to save money.

How does one go about renting an apartment? What does it entail as far as amenities go? How do you get the keys and such? Are there minimum stays?
The place we rented is a converted bakery. It's basically a studio - queen bed, kitchenette with oven, cooktop, fridge, espresso maker, etc., washer/dryer, private 3/4 bath. The owner has a few properties around Paris, and he meets you when you arrive, gives you a tour of the apartment and immediate neighborhood. He's been lovely to work with.
Most places do seem to ask for about a week, we're staying here for 4 nights and that was no problem.

It's been years since I was in Paris, but we stayed at the Hotel d'Orsay (right near museum) when I was there and we were really happy with it for the price (around $200 a night). It was close to public transit, the river, and convenient to the museums. DH and I walked or took public transit exclusively when we were there and had no issues.
We were in Paris for 9 days, never left the city, and I still have a list a mile long of things I'd like to do. I so need to go back.

Ditto this. We found ours (in the Marais, which we like) via TripAdvisor.com, though the owner had listed through a variety of sites. The owner was a British expat: he had a local agent who managed the property for him. She met us to give us the keys and a tour of the apartment; the owner had left extensive guides for neighborhood grocery stores, restaurants, pharamacies, suggestions for the best breakfast/lunch spots in the area in the apartment, which was nice as well.
When I was looking, I also looked at the Metro map to narrow our final choices down: it's nice if you're either near a large station (with different lines running through it) or in good proximity to a couple of stations that give you good access to the parts of the city you'll want to see.
ETA: I should also say that we've stayed in hotels in different parts of the city and the apartment was hands down a much better value.
Try looking for a hotel on SLH.com. We have never been disappointed by one of their hotels - they tend to be small, intimate and have great customer service. If you join SLH (it's free) you can sometimes get free breakfast or other perks.

The Park Hyatt is amazing. The location is fabulous and like Miso said, the staff is beyond fabulous! My husband is a Diamond member so I am never sure how much our perks/stay experience have to do with that, but it is great to hear that Miso had an equally wonderful experience.
The Hyatt Madeline is nice too, but the Park Hyatt is in a whole different league.

Yep! We used ours at the Park Hyatt Tokyo. You also get one free night per year at a lower level Hyatt (1-4). This year I used ours at the Hyatt 48 and Lex in NYC. The room was about $350 the night I used it and we booked it for free.
We'll be staying for probably 5 nights, and rooms seem to be at least 850 euros a night so unfortunately, it would be ridiculously expensive even if we got 2 nights for free. Sigh.
You don't have to stay there the whole time, silly.
We stayed at the Concorde Opera Paris our first night in Paris. I believe my husband pricelined it. It was no Park Hyatt, but it was totally nice enough. I think you'd be satisfied.
My friends also had a good experience with The Westin Paris Vendome, which is not far from the Park Hyatt.

We used one free night at the Hyatt 48 Lex earlier this year, too! Were you the one who said we missed each other by one day? LOL.
