200g flour 1 level teaspoon baking powder Pinch of salt 50g margarine/butter 40g caster sugar 1 egg Some milk
Sive flour, baking powder, salt into bowl. Cut butter/marg into bowl. Rub in with flour etc until it resembles fine bread crumbs (or squash the butter as my nearly 3yr old calls it!) Sive in sugar and mix in. Create small well in the middle. Beat egg with a little milk. Pour some of liquid into bowl (keep a little back) Mix with a fork until all dry ingredients "just" come together. Add more milk if necessary, a little at a time (less than you think!) When a ball is formed tip out onto floured surface and kneed very lightly to form a smooth ball. Flatten to around 2cm thick (or use rolling pin - I don't bother) and then cut out shapes as required. Glaze scones with the remaining egg mix Bake for 10-15mins in a hot oven (215C) Cool in a rack Enjoy!
I use this recipe all the time. Add raisins before you add the egg if you like them - I don't like raisins...
@ irish the scones are in the oven right now. The recipe was really easy to follow. Because I don't ever really have real milk at hand I substituted with soy milk. We'll see how the end result is. Btw I want to use them in a few hours from now. How do I keep them nice and fresh???
Keep them in an airtight container. They will be fine in a few hours. I'd always make them for same day consumption but if you did have them next day pop them in the microwave for a few seconds (like 5 seconds...).
Not sure how they'll work out with soy milk! Hope you enjoy them! doctoranda

irish they were soooo delicious. Btw the soy milk did not mess with anything. The recipe indeed was easy and they taste GREAT! I have 2 leftover in some tupperware and I'll let you know how they keep. I am so going to make this again!
