I impulsively bought some at the store the other day and now I don't know what to do with it. I was thinking of making kale chips. Anybody have a recipe to share?
Mostly in salads. The trick is to massage it with a little of the acid (lemon or vinegar), a little salt and a splash of olive oil until it wilts a little and that makes it so much more palatable.
I also like to use it in soups that call for greens. The smitten kitchen lentil sausage and chard soup is a favorite and I've used kale instead of green chard before and I use chicken Italian sausage to keep it lighter
I love kale chips! I used a recipe from allrecipes, but didn't bookmark it. We love it in soups, stir fries, lasagna, mac and cheese, and steamed with some garlic and lemon, just about anyplace you'd use spinach in a recipe.

I'm making kale chips with the rest of it (don't have a recipe, sorry), and I also love it in salads.
1) sauteed with EVOO, LOTS of garlic, a squeeze of lemon, and a dash of nutmeg 2) thrown into soups 3) salads--my favorites are as follows (make sure you "massage" the kale with the dressing): -tossed with small amount of quinoa, craisins, herbed goat cheese, red onion, oil and lemon -tossed with avocado, white beans, red onions, scallions, basil, fresh garlic, oil and lemon -tossed with pomegranate seeds, red onion, goat cheese, sunflower seeds, oil and lemon
I love kale, we eat it all the time. It is one of my favorite greens!
Chips and salads mostly. I keep my kale chips pretty simple, just a touch of EVOO, salt and garlic powder. 10-15 min in the oven and they are done. For salads, I massage it with apple cider vinegar and toss in some dried cranberries, shredded carrots, and slivered almonds.
In smoothies! Kale, banana, strawberries and any other fruit I have on hand like oranges and pineapple. The color of the smoothies is brownish but it tastes great!
