this might be useless, or maybe it will serve as inspiration: A few weeks ago SO and I treated ourselves to dinner at a fabulous restaurant here in Boston and as one of the amuse-bouche they served a beet French macaroon with a whipped goat cheese filling... OMG!!! I could have eaten a ton of those little bites of yummy goodness. I also want to try making a Red Velvet Cake with beet juice since I hate the idea of using all of the red food coloring that is typically called for.
