Hi ladies. Need your advice. BF's daughter is getting married on Friday, and I'm catering the wedding. We're doing a Thanksgiving-esque meal (don't ask, not my choice for July). So far, we've got a chocolate raspberry cake (from Annie's blog, doing a white chocolate glaze instead of chocolate) for the wedding cake and cutout cookies in the shape of a wedding cake. I feel like we need at least one more bite-sized dessert. Lemon and pineapple are off limits due to allergies. I was thinking some sort of fruit variation of a lemon bar, pecan pie bars, or mini cheesecakes. What do you think? I'm open to other suggestions, too! Thanks!
If nuts are NOT an issue, these are great. The raspberry comes from jam and I have successfully substituted blackberry jam and orange marmalade with the pecans.
How about mini fruit tarts? They're festive and the fruit is summery. Or chocolate covered strawberries? I don't think the desserts necessarily have to "match" the dinner as much at a wedding as they would at a dinner party.
