I am absolutely scarred after watching Food, Inc. and then Hungry for Change. I've cleaned up my family's diet considerably, but, at least right for right now, I can't bring myself to eat meat. I've also recently stopped dairy in hopes in will help my skin. (Except eggs) I was hoping someone may have a few meal ideas if you've been going at this awhile?
I got this recipe from a friend and thought it was really good and filling. I am just starting out with trying to cut back meat and find more organic options though. I just watched Hungry for Change and have a few others on my list to watch.
We eat mainly veg (DH is veg, I'm an omnivore). Skinnytaste.com has great recipes, and a veg tag you can search on. Also like slender kitchen. Our go to meals for weeknights include lentil tacos (filling can be done in crockpot and frozen), tempeh wraps, red lentil chili, etc.
We eat tofu 1-2 times per week, and do also use some processed meat subs (Quorn brand, Morningstar Farms, etc.).

I cook for just myself but my basic plan on every meal is to do a grain paired with veggies (I don't mind consistent)
The other night I made this great salad. Kinda a egg salad/avoBLT inspired thing.
greens tomato avocado HB egg quinoa (farro would have also been good. even pasta) dressing: a bit of mayo mixed with lemon juice and garlic optional: red onion
Pinterest has a ridiculous amount of vegetarian recipes.
Lentil tacos (basically seasoned lentils as the "meat"). Veggie stew in the crockpot. Lettuce wraps with chicken and veggies. Avocado pesto with pasta.
One of my favourite veggie meals is a mix of quinoa, chickpeas and roasted green beans.
I cook quinoa (one cup dry). While that is cooking, I will chop green beans into 1 inch pieces and then roast them in a 400 degree oven with olive oil and garlic for about 15 minutes. When the green beans and quinoa are done, I will combine them in a pot with a can of chickpeas. To eat, I usually add a bunch of Sriracha for extra flavour. This meal reheats really well to bring to work for lunch.

Sweet potatoe and back bean chili. Even my meat and potatoes husband likes it. Don't have the link but I'm sure google would find it. You just throw everything in the crockpot and leave it!
