I feel very confident that others will be bringing a king cake or a variation on it. It's the most obvious choice. I would go with something different.
Consider a baked grits dish (cheesy/garlic/+/- sausage), jambalaya, or gumbo. Or you could do a pasta salad and try to get mardi gras colors in there. Emeril makes an andouille bread pudding.
I wouldn't do cinnamon rolls if you're already having king cake.
Jambalaya is a good one because you can find an oven recipe, which I think would be a bit easier to keep warm. If you can find a variation on shrimp and grits that you could bake, that would be perfect.
If you're looking for what we actually eat during Mardi Gras, it's king cake, boiled crawfish, and froen daiquiris. Unfortunately the last two aren't work appropriate.
The only thing is the recipe only makes 8 but perhaps you could make mini versions by splitting the crescent dough into 8 instead of 4 and using mini muffin pans?
