Tonight's plan is mushroom wraps - saute up some mushrooms and onion and whatever spicing sounds nifty, and serve it in bibb lettuce leaves. I'll probably have it with roasted potatos.
Tomorrow I'm going out with some friends.
Wednesday will be either food from the freezer, heated up, or take-out pho.
Thursday may well be more mushroom wraps, because I bought a lot of baby bella mushrooms. I'll probably try spicing differently.
Friday will be chicken sausage with saurkraut and roasted potatos (I have a big bag of potatos to use up, and it's not so crazy hot here that I can't use the oven, so long as I remember to open the windows in the evening).
Saturday will be eggs, or I'll end up going out with folks that I an planning on spending the day with.

I got fresh pasta from the farmer's market, so that's a meal. I'll do a really simple sauce, like brown butter and sage or something.
I have a really tasty leftover mushroom sauce that I made last night, so I defrosted some steaks for tonight. I hardly ever eat red meat, but H is going to be gone most of the next month, so I'm being nice to him.
Since it's summer, we eat lots of caprese with the most amazing! (tm gordon ramsey) local delicious pieces of candy they call tomatoes.

I'm doing toast with hummus, roasted tomatoes and eggplant, and avocado. Turkey mignons with homestyle mac and cheese Grilled Eggplant, tomato, and feta stacks Tacos with roasted sweet potatoes and cowboy caviar. I have some chicken I was going to grill and throw in there too.

I don't feel like making ANYTHING. At all. I've been having salads for dinner every night. Sometimes with grilled chicken or turkey, sometimes just veggies. It hasnt' touched my digestive system at all (sobs).
Fruit salad and a bagel for breakfast. Greek yogurt for snack. Grilled sandwich for lunch.
J should be here sometime late tomorrow so it will be time to make real meals, again. Before I send him off to a year of DFAC eating.
I have chicken thighs in the crock pot and they'll cook while I'm at the office tomorrow. I made a korma sauce that I'll pour over the chicken and basmati rice.
Wednesday is mac and cheese style quinoa.
Thursday is pulled bbq sandwiches via the crockpot (again an in-office day).

I have not...it just came to me the other day when Tim suggested we have poppers for dinner. If it turns out as well as I'm hoping I'll have the recipe for you early next week.

Wrap them in bacon!! I've made them with cream cheese, pepper jack cheese and chopped jalepenos for the stuffing. Amazing!
We're having a lot of simple dishes until we get our UB later this week.
I made the most delicious enchiladas last night. There will be a repeat later this week. Tonight we are going to have chicken taco lettuce wraps. That's about as far as I've planned
Lasagna was our dinner last night; will probably do leftovers tonight as I forgot to take chicken out of the freezer to defrost. Thursday's dinner will likely be french onion crusted chicken with edamames and rice. Friday is just me, so I'll likely do leftovers.
