Does anyone have a suggestion? I'm at a loss. The dessert is for eight adults and two ten year olds. I have no idea what to serve. I don't know the GF lady, but the organizers of the trip (my friends) specifically noted that I need to accommodate GF.

Will you have a campfire or grill? Not fancy but slice open a banana (but leave they peel on), put mini marshmallows, chocolate chips and maybe nuts in the sliced peel, wrap the whole banana in foil and throw on the fire/grill. Let the banana soften and toppings melt then open and eat with a spoon. You could make the toppings more fancy too.
Hmmm. I don't know if I can find almond flour. We have 'weird' ingredients here, but a whole different variety of them than at home. I just had H bring Vital Wheat Gluten back from the US for me. The irony...

Do they have a decent variety of GF products there? My first thought was s'mores, but pick up a box of GF crackers too. I feel like s'mores are essential when camping! The banana idea is good too... But I would still bring ingredients for s'mores.

GF graham crackers can be hard to find and taste like dirt, IMO.

Baked apples on the grill - hollow out the core, put some nut-butter in there w/ raisins & cinnamon and wrap them in tin-foil?
Paleo Hedgehog - fastpaleo.com/recipe/raw-paleo-hedgehog/ I've made this one before - it would require making it ahead, but it tastes kinda like brownies...I brought it to work and it got good reviews from non-paleo/non-GF people
