I had a bag sitting on the shelf so I decided to get them soaking (I did the boil for two minutes, cover and let soak for 2 hours). I was originally thinking of just making some hummus but I know a bunch of you probably have more creative ideas-and now that it's Lent I'll be making a lot more meatless meals so I'm looking for ideas.
Falafel! I make this recipe but I add an egg to help it hold together better. (I've made it without and they fall apart quite a bit while cooking.) My meat-and-potato-eating H even loves this recipe.
We make this every couple of weeks and we both really like it. I also add in cooked spinach when you put the tomatoes in so that I don't have to worry about making a side vegetable.
For dinner tonight, I made some quinoa with chick peas, chopped tomatoes and parsley mixed in. I flavored it with some lemon juice, garlic and ginger. It was good. I cooked some chicken tenderloins to go along with it, but it would have been fine without meat.
I also love roasted chick peas. Actually, I guess I just plain love any chick peas.
