Because you think it is a PITA to make?
I love a Spanish omlette (potato/egg dish) but it is a PITA to make. I aslo love croquetas but I refuse to make them because it takes forever and they get eaten so fast that it is not worth it to me. I wait until I am at my in-laws so my MIL can make it.

Hmmm, that is tough because I like to cook!!
I've never attempted it, but I think beef wellington would fit in this category. And probably pierogies (which I'm missing right now!!!!). Oh, and eggs Benedict with hollandaise sauce. I'll always order that out, because a restaurant can do it better than I could!
Otherwise, I like a challenge in the kitchen for the most part :-P

When we are eating grain free I sometimes make this butternut squash lasagna that DH loves. He asks for it often but it is lot of work. You have to cut the squash into thin planks and peeling the squash alone is a lot of work. Plus my hands are orange after.

Anything deep fried -- the oil is just a pain to deal with.
And I love candies, but can never get them right, even with a candy thermometer.
And I know it's crazy, but stir-fry. The quickness of the cooking just makes me nervous and I feel rushed through the process, even if I have everything done and ready to go. I stopped doing them when I figured out what it was that made me so nervous and jittery every time I did it.

Pierogi aren't too difficult to make. I think they are easier than making ravioli (the dough is not as delicate).
I find enchiladas a pain to make. I like to do my own torillas and my own sauce and of course filling. I try to do the tortillas and sauce ahead of time and have it stored in the fridge. When I do that, it's much easier.
I love making eggs benedict, it's one of the meals that gets requests when we have visitors or we are visiting my parents. I think I make it better than any I've had in a restaurant.
