DH and I are thinking of doing Belize for our vacation this year. I would love some hotel recs and recs for any excursion companies you used or transportation companies you used. We are thinking we will spend most or all of our time on Ambergris Caye but haven't decided yet. Is there anything on mainland Belize that is a can't miss? We are mainly heading to Belize for the snorkeling. We'll probably be there for about a week. We like very nice accommodations but of course try to be MM as well. Anything else I need to know or consider? Thanks!
On the mainland, you could book a cavetubing excursion. We used cavetubing.BZ. Also, you could take a water taxi over to Caye Caulker for a few hours. If you go, check out the Lazy Lizard at the Split. Get a Lizard Juice if you go:)
I posted on your other thread on MM but I also want to add to NOT stay in Belize City and to definitely fly to Ambergris - we took a water taxi on the way to the island and it was long and horrible, and not much cheaper than a 15 minute flight!
We booked a flight on the way back and it was a lot better.

I was going to suggest Caye Caulker! It is such a darling island!
We stayed at Pook's Hill to have access to the ATM cave. The cave was incredible and a highlight of our trip.
Then we took a bus (would not really recommend this mode of transport) to Placencia for beach time. We rented a little cottage. We weren't very impressed with Placencia, but I know there are some really nice hotels/resorts near there which probably would have improved the environment.
On the same trip we spent time in Antigua, Guatemala (which I highly recommend- we loved our stay at Panza Verde) and at La Lancha to visit Tikal.

On the mainland - ATM is a definite. Cave tubing was also fun, but could be skipped.
Definitely agree with pp to fly to Ambergris and skip the ferry. On Ambergris, we didn't do much other than take a snorkeling trip. We stayed at Victoria House, which was amazing, and just relaxed by the pool, since the waters on the beach were filled with sea grass.
