S - arroz con pollo with white corn cake M - spinach ravioli T - Bookclub - I eat there, everyone else fends for themselves W - Beef brisket with merlot and prunes, Irish soda bread R - Chipotle chicken sandwiches with baked beans F - Brisket and brie tacos S - Chicken fajitas
For the arroz con pollo I'm just going to add some sazon, chicken, and rice to some leftover tomato soup - hardly authentic, but a great way to use up the soup.

Monday-SkinnyTaste Santa Fe potato skins and salad Tuesday-We have a meeting with a mortgage broker, so probably out afterwards or leftovers Wednesday-jalapeno popper chicken, and mixed vegetables, mashed potatoes Thursday-Lentil tacos, chips and salsa Friday-out to celebrate on of my CW's birthday with some ladies and their Hs from work to Outback Steakhouse

S-salad w/chicken sausage and corn on the cob M-pizzas on the grill T-chicken skewers, grilled veggies, cottage cheese W-out for trivia night Th-having a girl friend over for dinner...I'm not sure what I am planning to make yet F-out with a friend
M- grilled flank steak with chimichurri, zucchini and summer squash, and grilled potatoes T- lemon herb chicken fingers, collard greens, and prosciutto and cantaloupe salad W- cheeseburgers and quinoa T- shrimp and prosciutto tostadas and salad
However now all I want is Ledo pizza thanks to pagas' post. . I might have to order it next weekend!

Camping this weekend, Friday night to Sunday morning. We'll have a cooler, 1 burner camp stove, camp fire and grill pan. Here's what I'm thinking:
Breakfasts - instant oatmeal Lunch Saturday - veggie muffalettas, made on Friday - Ciabatta with olive tapanade on one side, pesto on the other, then tomatoes, roasted peppers, artichoke hearts and maybe goat cheese in the middle, wrapped tight, to take on our hike. Dinner Friday - veggie hotdogs in the fire pit, potato salad Dinner Saturday - grilled mini spinach pizza, side of tabouli Snacks - carrots and hummus, chips and salsa
