It's only 10:20 here, so I haven't made it yet, but I'm planning to make a big salad. Spinach/spring mix blend, black beans, cheddar, avocado, seasoned ground beef, sour cream, salsa. Maybe a few crushed tortilla chips for crunch factor. Mmmmm.
Baked chicken breast (breadcrumbs, rosemary & a bit of cheese), pear, and half of the avocado I didn't eat at breakfast. I might save the pear for a snack. It's a large chicken breast.
I'll spare y'all. I packed leftover cilantro lime quinoa and a very small amount of BBQ pulled pork together. It's a really odd, not exactly amazing, combination, but our fridge is getting empty! Oh, and an apple. Not my finest lunch...
