If the new owners wanted to show there were no ties with the KKK, why didn't they change the name to something that didn't use all K's? Like 'Joe's Coffee Place"?

I don't think those ties are gone. Either they still have ties to the KKK or they are trying to make money from people who think they do and still want to eat there.
