My super quick & easy faves, especially for spring & summer are salmon or chicken, both w/a salsa.
Salmon:season w/salt & pepper, add a drizzle of oil to a pan, and cook roughly 2-3 min (med-med high heat) on each side. Salsa: segment an orange & a lime, dice the segments up, mix with diced jalapeno, cilantro, and red onion, splash of lime juice. Serve on top of salmon.
Chicken: season w/salt, black pepper, and cayenne pepper. Cook in pan w/a little olive oil. Salsa: Diced avocado, red onion, salt & pepper, lime juice. Serve on top of chicken.
We just made blackened chicken w/cilantro lime quinoa last week. Just make a mix of 1/4 tsp. each paprika, salt, pepper, cayenne/ onion powder, and cumin and rub it on the chicken breast. Cook in a pan (w/a bit of oil) for about 8 mins on each side.
Bring 1 cup quinoa to boil in 2 cups low sodium chicken stock. Once it's done, add 2 tbls of cilantro and about 1 tbls of lime.
If you want you can add a avocado cream sauce to it, which is just an avocado pureed with two tbls of greek yogurt.
It's an easy Pinterest recipe and took a grand total of about 20 minutes.
Ooh I thought of another super easy one. It has to be quick for me because once I get home from work my goal is to be as lazy as possible...
Take a couple tilapia fillets (about a pound), cook in a frying pan with 1 tbsp of oil. When the tilapia is pretty much done add a cup or two of salsa (depending on how much you love salsa) and 3 tbsps of lime juice. Mix it all together (the tilapia should flake quite easily) and cook until the salsa is warm. Serve on tortillas (or in a lettuce wrap if you want) and add some cabbage, cheese, avocado or whatever else you think would be good. I personally just add cheese, which I understand is a little odd, but I'm addicted to cheese.
Nothing to add really but saving this because there are some good ideas on here. Anyone have any summery crock pot recipes? Everything I have is soups, stews, chili etc which I don't want right now but the crock pot is so easy for my long work days
I just made this on Sunday after seeing it on shutupandrun's blog. It came out so well -I will definitely make again. Not exactly summer-ish, but tasty. I will also link to a blog that recommended a way to make couscous that made it come out super fluffy.
For summer one of our staples is grilled veggie packets- potatoes, bell peppers, onions, shrooms, any other veggies on hand with olive oil and herbs. Bam- roasted slightyl carmelized yumminess after about 20mins.

My all time fav crock pot recipe: Crock Pot Salsa Chicken
4 uncooked chicken breasts, cleaned
1 jar of your favorite salsa
1 can of mexicorn, drained
1 can black beans, drained and rinsed
Juice of 1 lime
1 teaspoon cumin
1 teaspoon fajita seasoning
Whole wheat tortillas
Fresh chopped cilantro
Fat free sour cream
Shredded cheese
Place chicken breasts, salsa, mexicorn, beans, lime juice, cumin, and fajita seasoning in your crock pot. Mix ingredients up a little bit, making sure to cover chicken.
Cook on low for 8-10 hours, or on high for 4-6 hours. Serve as is OR you can shred the chicken up, stir it into the veggies, and serve it with tortillas. -
