A friend's tree is ripe and about to drop tons of avocados (and mangoes, feel sorry for me . Beyond guac/salsa or slices on sandwiches and similar preparations, is there some creative way to use them up without getting sick of them?
I don't love them enough to eat straight. If I did, that would certainly solve the problem!
You can freeze them. Cut in half, pit, rub a little lemon juice on the cut part and put back together. I have varied success with using them slice for sandwiches after this, but they are always fine for guac or baby food. Occasionally they do brown on the edges.
Mangoes are also good to puree up and freeze for smoothies or to add to yogurt later.
You can keep them in the fridge, which can slow the ripening if you need to!
I did some beer battered avocado and fries a week or two ago - a veggie version of fish and chips - and while a little, uh, fattening, it was really, really good.
You can blend them into hummus. I'm sure you can google a recipe for that, but I think you use them in place of olive oil, so you get the taste and benefits of the avocado as a fat in the hummus.

OH.MY.GOD. That sounds insanely delicious. I feel like a part of my life has been missing since I've never tried this before. I will definitely be making that next weekend. Yum!

I've been obsessed with various versions of chilled avocado soup (my favorite is with cucumber, herbs and a jalapeño for subtle spice). I had an amazing version of this in Napa once with some bacon and a spicy red pepper drizzle on top. It's also good chopped in top of gazpacho for summertime.
Avocado egg salad would be good, and I've also been seeing a lot of recipes lately that say to use avocado in place of butter to make a recipe healthier. I'm deathly allergic to avocados, so I've tried neither of these, but it sounds good!
I've never tried this, but I find it very interesting. All of her other recipes have worked out really well for me so it's on my list of things to try, it's certainly a little more crunchy/healthy than most people prefer. lol ohsheglows.com/2012/05/07/crazy-woman-chocolate-blender-pudding/
