One of our easy, go-to meals, especially during the summer, is chicken skewers.
We slice chicken breasts or chicken thighs into cubes and let them marinate in garlic, olive oil, balsamic and lemon juice. I couldn't say how much of each ingredient we use for the marinade, because I've never measured it. You just have to make sure that you put enough in to cover the chicken pieces, basically.
We do vegetable skewers with it (I usually combine red onion, green pepper, mushrooms, zucchini and cherry tomatoes.) We put it all on the grill, and serve tzatziki on the side. Done, and done. It's delicious!
I've been eating super healthy since I'm going to the beach in 10 days. I've been eating vegetarian. So lots of salads and chickpeas. I've lost 6lbs along with working out.
Typically though I make a lot in my crock pot. I make chicken with tomatoes, corn and beans for tacos/quesadillas/salads. It's easy, tastes good and versatile.
I use the crock pot a lot in the summer, it keeps me out of my kitchen so I can have fun outside.
I need to start working out more often. I have been really good with my portions though, so I think it's keeping things in check.
I want to buy a grill so I can grill out over the weekends. The kids will eat grilled salmon and chicken, so I can do up a bunch over the weekend and portion it out for dinners/lunches during the week.
2 pounds boneless skinless chicken breasts 1/2 cup of chopped onion 2 cloves of garlic, minced 1 tbsp olive oil 2 teaspoons orange zest 1/3 cup of orange juice 1 tbsp of balsamic vinegar 1/3 cup of bourbon whiskey 1/2 cup of molasses 1/2 cup of ketchup 1 tbsp of steak sauce 1/4 tsp of dry mustard salt and black pepper to taste tabasco, to taste 1 tsp of chili powder 1 pinch of cloves
Keep chicken in the marinade for 24 hours. Bake at 350 for 45 to 60 mins. Or grill it instead, if you prefer.
2 lbs. chicken breasts 1 (16 oz.) jar salsa or a can of chili red diced tomatoes 1 (15 oz.) can black beans, drained ½ lb. (8 oz.) frozen corn The spices I'm guessing I usually add more or eyeball it. 1 Tbsp chili powder
¼ tsp cayenne pepper ¼ tsp salt to taste cracked pepper ½ Tbsp cumin ½ Tbsp minced garlic ½ tsp dried oregano
I forgot to add throw it all in the crock pot, if you are using frozen chicken 8 hours on low, if not frozen check at 6 it should shred really easy.
It makes a great dinner to have during the week since you can use it for so many different things.
Um... I can't remember the last time I went to the grocery store.
I do have a board that is recipes I've made and liked. I also have been making a bunch of bento lunches from the Just Bento cookbook.
If you ever see a crock pot paella on pinterest RUN. It was the only thing I made from pinterest and it was so horrible. My H who will eat anything could barely stomach it.
