My most favorite co-worker ever has stage 4 liver cancer. She starts chemo on Friday. I'd like to make some meals for her husband.
What are your favorite meals to freeze? And what's the proper storage? My mom never froze meals, and I have no idea how to keep them from getting greezer burnt.
When I was pregnant I made lasagna, enchiladas, chili and spaghetti sauce. I froze them in those small serving size foil pans (they really are like two servin sizes, but they look really small). That way we didn't have to eat a whole pan of lasagna for days. I wrapped the whole thing in plastic wrap then again in foil, I believe. The chilis and sauces I just double wrapped in a large freezer bag.
I also made breakfast burritos, those turned out good too.

What's the best way to wrap burritos for the freezer? The aluminum cover is enough to keep the lasagna from getting freezer burn?
I like to do things that have a variety of uses like meatballs in a red sauce, shredded chicken in enchilada sauce, taco meat. I also like to light up the grill and cook boneless, skinless chicken breasts until there are 90% done. Cool and slice and portion in snack size ziploc bags. Oh, one more. Cook up a big batch of rice, portion in snack size ziploc bags and freeze. 30 seconds in the microwave and it's ready to eat.
