Our little guy will be 3 months this weekend and we are going to Mexico for the weekend for our 5 year anniversary. Should I get a POA drawn up? Doesn't that need to notarized? We don't have wills or anything made yet. He will be staying with my parents. I was going to leave them my medical card as well. Anything I am not thinking of?

Absolutely get a POA - some states have POAs for minor children (that's what my friend gave me when I had her kid for a week). And I would give your pediatrician a heads up so if she calls with a quick question they might not make her jump through hoops. Give her your health insurance card along with hospitalization if it is different as well as Rx if that's different.

I called our local hospital and our pediatrician when my parents stayed with our kids while we were out of town. Both said not to bother. Both said they treat the child whether or not they can get in touch with the parents.
It may or may not have been good advice but we didn't have one drawn up.
ETA: We also went to Mexico and we hustled to have wills and trusts established before we left.
