Use about 1/4 cup with any kind of pasta (I usually use penne, but anything works, even orzo), and add some chopped artichoke hearts, sundried tomatoes and kalamata olives. Top with a little feta or goat cheese.

Take a baguette, spread with pesto, top with thinly sliced apple, shredded monterey jack cheese, and some freshly ground black pepper, and broil until the cheese melts. Yummmmm.
