Hm.... the last book I literally did not put down was Harry Potter and the Goblet of Fire. Picked it up at 6pm, didn't put it down until I'd finished at 3am.
Order of the Phoenix would have gone the same way if my ILs weren't a bunch of douches.
ETA: but that's start to finish. There are lots of books I've stayed up way too late reading. Right now it's Catherine the Great by Robert K. Massie. I read it before bed and have been staying up till 10:30/11pm. Really excellent.
Shutter Island by Dennis Lehane. I had weird dreams after that one.
That was the last book that I couldn't put down and stayed up late to finish. I haven't gotten that sucked into a book since I don't think. That was about 2.5 years ago (right before the movie came out.)
A Promise of Justice by David Protess and Rob Warden. It was assigned for a college class, and I literally stayed up until 3am with a flashlight under my covers to finish it.
I'm reading Election by Tom Perrotta right now. It's a super quick read, but unfortunately, I had to force myself to put it down. I WILL get a chance to finish it this week.

I know it's trendy, but Gone Girl by Gillian Flynn was like that for me. I LOVED Louise Penny's Inspector Gamache series - I think I read the 7 books in 10 days. The 8th one comes out in August.
For non-fiction, I'd pick up David Finkel's The Good Soldiers.
The most recent that meets the spirit of the question was The Hunger Games. But I did read that series over a week in total, so obviously I put it down.
The only novel-length book I have ever read in one day is Harry Potter and the Deathly Hallows. Then I let my DH read it over a couple of days, and then I re-read it over a week so I could catch what I missed the first time through.
I couldn't stop reading the Meredith Gentry series by Laurell K Hamilton. There are 7 books I think and I was obsessed. Fun story, great characters, easy read, lots of hot sex. It's about fairies. Now I'm back to reading more of my literature types of books, but those were a fun break for my brain.
OK, now I remember that I sped through one or two Harry Potter books, The Lovely Bones (so disturbing, too bad the movie sucked), and probably half a dozen Stephen Kind novels.

(In my defense for that, I seriously understand how that woman made money hand over fist with those books. Honestly, despite the shitty, shitty writing, I couldn't help but feel like I was seventeen again and IN LURVE and OMG PARENTS DON'T UNDERSTAND ANYTHING. Then it made me sad that girls who actually ARE seventeen and reading those have that message reinforced instead of simply having parents who say get the fuck over it, like mine did.

Also deathly hallows, and pretty much all of the HP books, honestly. More recently, Handmaids Tale. I read 3/4 of that while sitting around at jury duty and blew through the rest the next day I think.
When I was younger there were soooo many that were like that, but unfortunately I can't recall many at the moment. In fact, pretty much everything I read was like that.
Deathly Hallows set my record - I didn't sleep and I ate while I read until I was done.
More recently, a friend recommended the Fever series by Karen Moning. I flew through all 5 books - definately not everyone's cup of tea but I really enjoyed them.
