I cannot believe how deserted the nest board is......makes me sad because I was a very active part of it 6-7 years ago when is was huge and you had to sift through pages and pages each day! I don't know the whole story but from what I have read, sounds like there was good reason for the mass exit.
I am trying hard to get myself and family to eat more beans......so I need your favorite bean recipes!

It's sad right? I have a few recipes in que (basically nothing written up but pictures taken) since we are trying to eat more beans as well. We've been doing pinto with cilantro, refried beans, black beans by themselves, black bean burritos etc. So far they've gone over very well.

My favorite way to eat beans is in a cold salad. I mix whatever beans I have (white, cannelini, black, pink, kidney, chickpea, etc) in a bowl. Rinse them off. Throw in some chopped bell peppers, red onions, whatever other veggies you like (carrots, celery). I then season with balsamic vinegar or lemon juice, olive oil, salt, and an all-purpose seasoning mix. Toss and eat alone or over quinoa. It's fast, easy, and a good way to use up some cans of beans that are sitting around.
I just made these black bean cookies to try to get more protein into my son. I used chocolate chips instead of unsweetened chocolate and they came out really good.

Pork and Lima Bean Casserole: Pork and Lima Bean Casserole 2 cups dried lima beans, soaked overnight 1/2 lb salt pork, cut at 1/4 inch intervals 2 Tbsp vegetable oil 1 large onion, chopped 1 clove garlic, minced 1 1/2 Tbsp chili powder 1 can tomato soup 2 tsp Worcestershire sauce 2 tsp mustard 1/2 cup dark brown sugar 1/4 cup vinegar salt to taste 1 1/2 lbs cooked pork
Preheat oven to 350. Boil water in a large pot. Add lima beans and salt pork and lower heat. Simmer 1.5 hours. Drain and reserve the liquids and salt pork.
Heat the oil in a saute pan and add the onion. Cook, stirring until soft, and add garlic. Saute another minute.
Stir in chili powder, tomato soup, 1 cup of the bean water, Worcestershire sauce, mustard, sugar, vinegar, and salt. Heat until it bubbles.
Cut the pork into large pieces, add the sauce, and cook a minute. Remove from heat.
Fill a casserole with a layer or lima beans, sauce, another layer of lima beans, sauce, and palce the salt pork on top. Bake covered for 45 minutes.
