I haven't been to Swedish Lapland specifically, but for northern Scandinavia in general, go dog-sledding and if the weather cooperates, try to see the Northern Lights. I know that in northern Norway there are tour operators that follow the weather reports carefully and even on some overcast days can take you to areas with less cloud cover so that you have a better chance of seeing them.
I don't know what hokey means, but I find it is cheaper to do it independently. I've been to northern Finland if you want some recommendations up there.
