"I was thinking about getting off on demand, but it sounds like I should be glad that I didn't"
What type of thermometer do you use for ice cream?
Well...you see... I live on the wild side because I grew up eating custard ice cream without cooking the eggs at all. So I just heated this up until I thought it was hot enough, but if I had been a good girl, I would have used my candy thermometer.
ETA: It was amazing! It didn't get frozen all the way by the time we were ready for it, but that didn't matter at all. So yummy.

See, in my mind, thermometers prevent disasters. If I take my oven thermometer out of the oven, I can almost guarantee that whatever I'm baking will flop (bad oven). I can make candy with a thermometer, but without one I can't. I've never made a custard based ice cream or watched someone make it, so it seems easier to use a thermometer until I know what it should look like.
I have a candy thermometer and an instant read one, and the recipe you linked says instant read, but my first thought was the candy one. So I was slightly confused.
This recipe looks so good! We're about to start using our ice cream maker, and peanut butter ice cream is first on the list, but I think this might be next Lol I even bought cake mix so I can make it.
