Is your wifi turned off? If your ereader hasn't connected to wifi then I've heard they will stay on. People have used this to their advantage when they're almost done and the book is about to expire.
My audiobooks stay on my iPad until I try and sync it.
My Kindle books stay on it so long as I'm reading the book, regardless of my wi-fi settings. I can't remember if they auto-delete or not (3rd gen Kindle).

Really? I will have to use this trick. I didn't even think of that.
I have had them stay on my nook before. But when you go to open them it says that the lending period expired. I have to remove it via ADE on the computer.
I'll have to check. I'm not finished with it yet so I wouldn't mind keeping it. But I've had other books expire in the past month or two and I haven't changed the settings so it's a little odd.
Yeah, I usually just don't turn the "sync" feature on when I'm almost done with a book! I have a regular kindle. The book will still be available for the next person to download from the library's website, unlike if you keep a physical book past its expiration date. So it's a win-win.
I will return a book on the kindle app and delete the message saying it was returned, but a few hours later the whole book will show up on my app again. I have never turned my wifi off.
ETA: When I say the whole book showed back up, I mean that I can still read the whole book.

I don't know about the Kindle, but library books stay on my Nook Color until I actually delete them off using my USB cable. I can't access them past the lending period though.
