What sorts of things is he eating now? I would feel free to offer a bigger variety of foods but not push him to increase quantities if he's not interested. Babies are usually pretty great at portion control, so it would be silly to try to overfeed him for whatever reason. Not to mention that trying to push more food just sounds like an exercise in pointlessness. And mess.
Well I feed smushed up bananas and avocados, and then a variety of purées. He just doesn't seem to care.
DD was at least 10 months before she actually started eating solids and dropping nursing sessions/formula. I just kept offering and she eventually enjoyed things more and more. i didn't do a ton of variety in the beginning but as she was able to eat bigger chunks of things I just offered her what we were eating and she would pick and chose what to eat (note: there was no real preferences at this stage).
Is the pedi worried about weight gain? Or just because that's what he/she thinks babies "should" do?
If it's because he should be, then eh...KOKO. Breastfeeding peeps always say "Food before one is just for fun."
If it's for weight gain, maybe try baby oatmeal mixed with breastmilk or formula (whatever he normally has). Then it still tastes basically the same, but he gets some iron and is introduced to a new texture.

She's pretty hippy when it comes to most things, and I think she just wants to make sure he continues to gain weight since he was a preemie. I mentioned that I felt like he is nursing less, and she believes it's because he is more efficient. I guess I probably have a little working moms guilt or something.

Yes, kids get MUCH more efficient as they age. Don't let working mom guilt get you on this one. If he's happy and healthy, you're doing great!
Have you tried oatmeal & milk yet? Rice cereal gets a bad rep for lacking nutrition. Oatmeal isn't awesome, but I like it to thicken some foods & intro'd texture with DS2.

He hates it...it's the only food he actively spits out (and then he puked, LOL).
Keep offering and wait. DS didn't really eat until 18 months. Yes. Eighteen. And I went back to work full time at 12 months and never pumped him a drop. DD likes food and eats more, but it still tiny (around 10-15th percentile for weight - so not worrisomely tiny). Your job is to offer food, his job is to eat as much as he likes.
It took months got him to understand/like table foods. He loved sweet purées but nothing else. Just keep trying. I notice that cold food works a lot better than warm so I'll cook something then cool it. Pasta and bread are his favorites - carb lover.
Neither of my boys would eat baby food. I continued to offer it, but their main source of food was milk until they were old enough to do finger food. I probably wouldn't worry much about it as long as he's gaining weight.
My DD hated purees. It was a huge battle every time we tried. I finally gave up and just started giving her table foods. She was more interested in eating that.

my baby hates food. gags at everything and I mean everything! so I thin purees way down with milk or water and he still gags. he hates it!! I don't know whose kid he is b/c DH and I love food. lol
My DS puked after eating oatmeal once too. scary! And I haven't given him oatmeal since.
I still feed him something every day though. We've done sweet potato, banana, avocado, peas, broccoli, apples, prunes, and the oatmeal. Hates it all.
My daughter wasn't really interested at all until 7.5 months. Then it was like a flip switched. I do purees, and little tiny cut up bits of food (pasta, fruit, veggies), puffs, melts.
Our doctor suggested mixing a little breast milk in the puree since it would make the taste more familiar and potentially the kid would be more likely to eat it. Have you tried mixing milk in anything other than oatmeal?

My daughter is a couple weeks younger then your son and she doesn't have a huge interest in anything either. We just keep offering different stuff to see if she starts to after a while.

This makes me feel better...it seems like all the babies D's age are all into solids, and he just doesn't care...at.all.

My DD is 8.5 months and, like some PPs said, it was like a switch went off a couple weeks ago - she was sitting in her high chair and opened her mouth wide for some purees. I'm starting to give her more textured things, and she pretty much hates all of them. But I'm trying once a day just to get her used to it.
I got a LOT of pressure from my MIL to get her to eat, and she force-fed her once. I was so pissed because she totally regressed after that. Just keep doing what you're doing. As long as he's gaining weight I wouldn't worry.
My youngest did not take to solids until a year, and wasn't eating regular meals for a few months after that. We kept offering, but our pedi said not to force it. I don't see how anyone could force it anyway. Mine would have put up a pretty nasty fight! she is still very picky at 2, and it is often frustrating, but normal toddler stuff.
I believe my girls are a little older than D and they were also premies. Twin b has been an ok solids eater for a couple months, twin a though until recently would clamp her mouth shut if I tried to feed her. At her 9 month appt I told the dr she wouldn't eat his response was he's never seen an anorexic baby. So basically if she needed more she would tell us. He also said because we have low risk of peanut allergy to start feeding them peanut butter. I haven't started with the pb but around then I offered full far yogurt and both girls love it. They'll even eat purées mixed with it. And now within the last couple days twin a will even open her mouth for purées without yogurt. All that to say, keep offering eventually he'll eat.

Food before one is just for fun and all that.
In our case, though, DS was interested in solids, just not ME feeding him solids. In his mind, Mommy was for breastmilk only. We didn't realize this until S.O. was off work for a week and fed him solids a few times a day.
