I bought a rotisserie chicken two days ago and need some inspiration. I don't really want to just slice it but am at a loss as what to make. What's you're go to recipe?
I make chicken pot pie "soup". It is basically chicken pot pie filling but I added an extra can of chicken broth by accident once. It made a nice soup and I don't really like the pie crust anyway, so it was a keeper. I'll have to see if I can find the recipe I used.

I shred the chicken and throw it in corn tortillas to make instant tacos. You can also add what ever toppings you like. I will also simmer it in enchilada sauce and then make enchiladas from it. Chicken Tortilla soup, chicken noodle soup, pot pie are some other things I've made with them. Sometimes I will just shred it and freeze it to give to DD on nights that I haven't planned anything for dinner.

I make a salad with 1/2 of it. Field greens, a fruit (mango, strawberry, or nectarine), a nut (peanut, walnut, or cashew), a cheese (diced Colby, feta, blue, or whatever you like), 1/2 a small onion, red or yellow bell pepper.
I like sesame ginger dressing at the moment.
I also do a Mexican salad, with crumpled tortilla chips, black beans, corn, chicken, and field greens, topped with salsa and cheese or sour cream.
With the other half, I dice it and freeze it and add to quesadillas, tacos, sandwiches, casseroles, or whatever else we have through the week. One rotisserie chicken is our meat for the week (DH eats work lunch out, so he has more then.)
I use rotisserie chicken a lot--it is my go to shortcut when we're pressed for time. I generally shred it and use it in:
Quesadillas Flautas Enchiladas Chicken tacos Tortilla soup Chicken Caesar salad Greek salad with chicken Spinach salad with goat cheese and craisins Pita pockets stuffed with avocado, tomatoes, etc. Chicken and spinach white pizza Chicken tried rice Various pasta dishes
Pot pie - sautee onions and garlic in a pan, add vegetables (I usually use the frozen corn/peas/carrots mix, plus mushrooms if I have them), add the shredded chicken, and pour in some broth. Add a little flour and whisk to thicken it, and add salt and pepper and thyme. Top it with homemade or frozen pie crust, or canned biscuit dough.
Shepherd's pie - basically the same thing as above, except I top it with mashed potatoes and shredded Cheddar cheese and stick it under the broiler to brown the cheese and crisp the potatoes a bit.
Chicken salad - mayo, chicken, chopped celery, sliced grapes, walnuts or pecans, salt and pepper, a little bit of other seasonings if you wish (paprika, cumin, curry, etc.)
"Gyros" - mix up some plain Greek yogurt and diced cucumber (drain it in a coffee filter first), finely diced garlic, salt and pepper, and a squeeze of lemon. use it to dress the chicken in a pita with lettuce, tomato, and sliced cucumber.
"Enchiladas" - I know they're not authentic by any means, but we like them: sautee onions and garlic, throw in the chicken, some black beans, corn, a can of Rotel, seasonings (cumin, chili powder, cayenne, garlic and onion powder), add a little sour cream or cream cheese, and a bit of enchilada sauce. Cook it down a bit, and then add a bit of shredded Cheddar and/or Monterey Jack. Roll the mixture into flour tortillas, place in a baking pan, cover with the rest of the enchilada sauce and shredded cheese, and bake until crispy.
My go to in all seasons outside of summer is not really a recipe per se - but shredded chicken over rice with Heinz storebought chicken gravy on top and sauteed spinach onion and garlic on the side (w/parmesan shredded on top). Yum!!
