I'm on the hunt for a healthier tart crust recipe. I usually use pate brisee but since I'm watching calories, I want something that still tastes really good but but healthier. I'm going to pair it with some lovely gooseberries I bought, so it could be a shortbread or cookie crust style if still healthier.

I think there are oatmeal crust recipes out there--that would ahve some whole grains. Or use something like almond flour to get some protein in there. I've also seen coconut crusts. None of these are low cal or low far, but they have healther fats, whole grains, protein, etc.
