I have a hard time with making salads at home because the greens tend to go bad before I use them all up and I abhor throwing food out. Doesn't help that DH isn't much of a salad fan. Any tips on making salads at home without wasting ingredients, especially a large serving that I could divvy up for my packed lunches? I feel like all heads and bags of greens are just too big for me. I do buy premade salads from my online grocery delivery company but making my own would be cheaper.
I've found that certain greens seem to last better than others. Lately I mostly eat arugula.
I have Crohn's and can't eat very much lettuce (and certain other raw veggies) without it causing major issues for me. But the benefit is I've realized that you can also make pretty delicious salads that don't have lettuce at all.
My favorite is chopped salad with avocado, tomato, peppers, onion, cucumber, and your choice of protein (I like shrimp or chicken). Then make a dressing with olive oil & lime juice and toss. It will keep for a few days after it's made, plus most of the ingredients last whole for a week so it's easier to use them up I think.
You might also consider making salads out of alternate sources. I make one that is entirely shaved brussels sprouts with a lemon vinaigrette. I throw slivered almonds and other veggies in with it. The brussels stand up to the dressing much better, so it can be tossed ahead of time and it's a nice alternative to eating lettuce.

Very interesting. How do you shave the Brussels sprouts?

Food processor with the slicing blade. If you don't have one, I don't have any suggestions. It would be a huge pain in the ass to do with a knife.
