What do you make? Especially if it takes you very little time? :-)
Boneless, skinless chicken breasts, not bone in. I feel like I have a ton of recipes that call for chicken breasts, but I'm too lazy (exhausted) to use a real recipe most nights.
My family is sick of me throwing BBQ sauce over it, throwing them in the oven, and calling it barbecue.
Chop and saute with garlic and fresh parsley. Serve over pasta and whatever sauteed veggies I have on hand with EVOO and parmesan cheese. And more garlic.
I would broil them, cut them in thin strips, and then mix with bow tie pasta, sautéed zucchini, and pesto sauce (I'm planning to make this tomorrow btw, lol).
I also make mustard chicken a lot with sautéed mushrooms and chicken parm.

If it's early in the day I'd throw them in the crockpot with salsa and seasoning and use the meat for tacos or quesadillas. Or with BBQ sauce and have sandwiches.
Later probably just bake or sauté and serve with rice or pasta.
So so so easy is Iowa Girl Eats parmesan garlic chicken. Coat chicken in evoo, then top with a mixture of evoo, minced garlic, and parm. Put in oven for 20 minutes.
Tonight I chopped up two chicken breasts add salt & pepper and cooked them in a pan. I made linguini ,had pesto sauce in the fridge and tossed it all together.
Keeping it really quick? Stir fry. Sautee broccoli, carrots, bell peppers, mushrooms, snow peas, etc with cut up chicken, then a quick sauce with soy sauce, rice vinegar, brown sugar, sesame oil, garlic and ginger.
If I'm feeling a little more ambitious and think about dinner before 6 pm (RARE) I'd put them in crockpot with a big can of crushed tomatoes, a diced onion, some grated ginger, salt, pepper, and a bunch of garam masala. Walla, chicken tikka masala! It's better with thighs but either works. I mix greek yogurt in before I serve.
-Fajitas -Chicken parm -Indian (bottled sauce with sautéed peppers, onions and naan) -stir fry (bottle teriyaki sauce, 3 veggies over brown rice) -stuffed breasts (usually do feta and sundries tomatoes)
Wrap the chicken in small tortillas. Bake at 350 for 15-20 minutes. Homemade taquitos!
I made this last night, and it was a hit. I added salsa and a bit of queso with the chicken, and they were awesome. Thanks! I don't know why doing this had never occured to me!
Alyssa -- I actually have that spice packet in my pantry, but I've never used it. Trying that tonight :-)

This is essentially what we are having tonight, lol.
Cut chicken breasts into cubes. Saute chopped garlic, add chicken and cook until it browns on both sides, add chicken bouillon cube/powder (optional), add the juice of 3-4 limes, simmer for 5 minutes then add a bunch of chopped cilantro.
Wrap the chicken in small tortillas. Bake at 350 for 15-20 minutes. Homemade taquitos!
