How about you give me all of those recipes, and that will be my meal plan, bc it sounds delicious!
We will prob meal plan Sunday. I know at least 2 nights will be grilled chicken, grilled pork chop, with a veggie. Those Cuban meatballs sound insane, so hopefully that. Maybe a grilled mahi with mango salsa one night.
I'd like to make some kind of soup on Sunday for lunches, that's easy. Prob do salsa chicken too.
Oh and probably that carnitas recipe from last week!
All I keep thinking is that I need to find a paleo meal service. Because this would be soooo much easier

The paleo meal service I use is a life-saver. Seriously. This week, I spent $110 (more than normal, admittedly) and got family-sized portions of the following: Egg frittata w/oven-roasted, homegrown tomatoes, topped w/walnut-basil pesto and served w/Beeler's natural breakfast sausage. Honey-dijon pork shoulder - Slow-smoked & roasted pork shoulder mopped with dijon and local honey, all garnished with house pickled onions and jalapenos, served with a blend of super greens. Tarragon chicken salad - Diced chicken breast tossed in lemon-tarragon aioli on homegrown tomato & garnished w/toasted almonds, red grapes and mixed greens. Served chilled. Grilled flank steak chimichurri - Grilled, sliced flank steak, smothered in a chimichurri sauce, garnished with sauteed mushrooms and onions, served with a roasted, pan-seared sweet potato.. Spaghetti squash and pesto chicken - Ground chicken tossed in walnut-spinach pesto served on roasted spaghetti squash garnished w/roasted tomatoes.
This also happens to be my meal plan for the week! Haha.
I know I'm not supposed to have the honey in the pork shoulder, but I'm a rebel like that... that kind of thing doesn't trigger the sugar monster for me.
Carnitas are in the oven now to have over salad for lunches (yum!). Chicken is roasting for dinner tonight and tomorrow (with grilled veggies). Zucchini pasta and more chicken with "fries" the rest of the week. I also made quiche and porridge for breakfast (I likely won't want super savory every morning - the nuts and coconut milk are a bit sweeter). I hope it goes well!

Have you tried the porridge yet? Omg SOOOOOOO freaking good.
I banned myself from it this week before I over did it a bit last week LOL.
I tasted it after I made it before it went in the fridge- it is yummy! I am a little worried about what a normal portion might do to my stomach, so will try eat small portions.
Do you heat it up in the morning? I am thinking of eating it cold with a splash of coconut milk and blueberries.

Yum, the Elvis burger looks really good. I'll have to try it soon.
I finally got my plan together and went to the store today. Here's the menu:
- Greek chicken wrap - tortilla for H, I will eat as a salad on spinach
- Carne Tampiquena tacos - lettuce wrap for me, tortilla for H
- Pad Thai - noodles for H, spaghetti squash for me
- Slowcooker Korean short ribs - with rice for H and cauliflower rice for me
- Loco Moco - also with rice for H, cauliflower rice for me
- Chocolate chili - probably on spinach
- Chicken gnocchi - H really wants this. I'll probably sub zoodles for mine but the sauce has dairy and flour. I'm thinking I'll use tapioca flour and treat the dairy as a bit of a treat (I'm post-w30).
