Fish (sunfish, crappie, walley). I don't really care for fried foods in general, but fish in a fryer is pretty awesome. if you cut it into smaller pieces and had a variety of dipping sauces available, it would be delicious.
On a side note, I was a little perplexed when I first read your OP about having the fryers running all night for a party. What kind of party are you having?

Looking for anything! Going to narrow it down to probably four apps, three proteins, and a few desserts. We're tacky and friends are bringing stuff too:)
Tater tots. Yes. Last fall I followed my husband into his work building one morning because I had time to kill. They had fried tater tots in the cafeteria and my pregnant self was SO HAPPY. I had not tasted taters tots so crispy since college where my addiction was born.
Really, the question is, what is NOT better fried?!!?! Nothing, that's what.
oh, I agree. That's why we're having a whole party of fried food! Don't worry, party planners. We'll have a big veggie tray and plenty of beverages to round it out
I am here to admit that I've never had a fried Oreo. I was thinking I need to have a girls' night soon where we all bring a different Oreo flavor so we get to try them all without having 10 packages in my cupboard. The frying night seems like a good time to try fried Oreos. I think I need to space these two parties out for the sake of my waistline, though!
