I live in GA, zone 8 I think. I have nine lettuce plants that while are growing rather nice and full, are bitter as hell due to the heat. Newbie mistake according to old man google.
So I want to pull them and put something else in their place but isn't it kind of late for that?
your plants will just be ready to harvest later than if you planted them early. Some things, like beans, will stop setting fruit when it gets over a certain temperature but will start back up again when it starts to cool down.
You could do melons, squash, carrots, parsnips, radishes...
You could definitely do tomatoes, peppers or eggplant if you don't have them already. They all love heat. I picked up some seedlings from the nursery the other day and it was $3 for four small plants.
Okra. If you like fried okra, get thee some okra plants. They grow quickly in our heat. I have grown them in containers before with no problem at all. They don't mind the heat and can withstand some drought conditions.

I can't remember what the cut off temp is, but I know that when we had our three weeks of upper 90's and low 100's, the beans would flower but not fruit. Once we got back down to upper 80's I think I started getting beans again.
