So H makes these southwestern egg roll things that are delicious and are requested at every gathering of friends we go to. They're simple...just seasoned chicken, black beans, chicken, corn, and cheese rolled in a wonton wrapper and fried. But they're so good.
Anyway, we have our third (!!) fantasy football draft tomorrow and he's been asked to bring them. He wants to make some type of egg roll with shrimp, too. The question is what type of flavor/filling should he add with the shrimp? Should he keep it southwestern? Maybe something spicy and Cajun? Or Asian with cabbage and...what else? What would you add into the roll with the shrimp for those types of flavors? Normally I'm ok with improvising during cooking but I'm not doing so well this time.

For shrimp, I would do Asian- I've mixed cabbage, peanut butter, chopped peanuts, shrimp, shredded carrots and soy sauce.
That sounds awesome. A little bit of cilantro in there wouldn't hurt anything either. Or maybe a cilantro based dipping sauce so the cilantro haters can slip it.

HA! DH said the same thing when I made them last, and I am a cilantro hater. But a sauce would be good.
