What should I make for my bro's bday dinner?

I'm bored and am surfing around looking for recipes but am indecisive and haven't found anything . Any must-make meals that you would recommend? It's for my brother's birthday dinner tomorrow. It will be very casual -- just me, my brother, his girlfriend and her sister. He's also very easy to please so it doesn't have to be anything crazy fancy.

Quesadillas? S.O. makes with roasted vegetables and chorizo.

Thanks, gals. Ha, I totally forgot about Pinterest. I hardly ever use it but should wander over there. I have no idea what I want or don't want. Those sliders look intriguing, though.
