We are heading to Prague in December before Christmas, and then we are going on to the UK. Anywhere in Eastern Europe/Germany that has Christmas markets would be awesome - Prague, Vienna, Tallinn, anywhere in Germany (Koln is supposed to be great). We love Prague, and they have a good Christmas market.

I've been to Munich, Berlin, and Vienna during the Christmas season. The Munich Christmas market was amaaaazing. It was large in scale and the street food was delicious.

How long will the trip be? If it can go until New Years I'd say Iceland. Christmas festivities last much longer here and NYE is insane with fireworks and bonfires!
Prague at Christmas was wonderful. Huge Christmas market. We loved it. We also went to Vienna and Salzburg on the same trip and enjoyed Salzburg very much. The markets were larger in Vienna but Salzburg was so charming. Our last stop was London which doesn't really have a Christmas market but the city is all lit up and decorated for Christmas.
London has a Christmas market on south bank although it is not anywhere as impressive as ones mentioned above. London at Christmas is great though. Wherever you are for the actual holiday be prepared for stuff to likely be closed not just on the 25th, but often on the 24th and 26th as well.
