I'm starting the program tomorrow. I did my grocery shopping yesterday and have some meals in mind but I feel like I need to do a lot of prep today (and every sunday). My H and I work full time and we have a 2 year old so I don't have a lot of time in evenings to prepare meals.
What prep do you do on the weekend? Especially to prepare for you lunches? Does it help to just chop up a bunch of salad ingredients and use them throughout the week or do you find they get brown and yucky too quickly?
Has anyone shredded up a large amount of sweet potatoes for hash to cook up on week day mornings with eggs?

I would crockpot/roast something on Sundays for lunch m-w, then left overs or salsa chicken for th/f (I have a tiny crockpot I can thrown 1 breast in). That was the easiest. Then I'd just slice a fresh tomato, avocado, and/ or cucumber each day at lunch to have in the side, with a piece of fruit.
Prep eggs on Sunday, and do monkey salad or berry salad for breakfast. I found cooking potatoes and the reheating them for breakfast was easiest, instead of just cutting them. We'd make a big batch on the weekend (or Fridays to have in the weekend too). They stayed fine.
I do cut up veggies into salad sized pieces and they don't get gross. It makes it easy to throw a salad together the night before. I also hardboil eggs as I'm cleaning up dinner (2-3 days worth) for breakfast. The best thing I started to do is to make a little bit more when I cook dinner so that I have leftovers, so that will be my meat for my salads for lunch the next day.
Today I made mayo and salad dressing. I made egg salad and hard boiled eggs. I shredded three sweet potatoes and just put them in a container for breakfast. I'm also going to make Asian meatballs and traditional Italian meatballs, both in large quantity to freeze. I grilled some chicken for later in the week and I'm baking some yellow and sweet potatoes to reheat. I also have a lot if pasta sauce going, which I'll can it freeze.

For lunch, I typically have meat that I have roasted on salad (this week is pot roast, but I have done carnitas before, for example). I make the roast on Sunday, then pack everything up each morning. I also make my husband a paleo frittata each Sunday for him to eat for breakfast each morning.
