I just started today. It was kind of a last-minute decision last night based on a conversation with DH, so I have done no prep - guess I know what I'll be doing this afternoon. It's only 9:30, so I can't say how it is going so far - I had two eggs and a banana for breakfast, since I already had those things in the house. I subbed unsweetened green tea for coffee, which may be the only real adjustment so far. I like green tea, but it's been a rough morning and the Starbucks downstairs was really calling my name when I walked by!
Any tips from those of you who have been doing this a while?
Yes! I started today. I did a ton of prep over the weekend. I had eggs and sweet potatoes for breakfast. I packed a large salad with egg salad made with compliant mayo and a creamy balsamic dressing that I made yesterday. For dinner we are having grilled chicken and zucchini with sweet potatoes that I already baked yesterday. My black coffee was good. I didn't really miss the milk that I normally put in it. I had to throw in some ice cubes to cool it down though

I am on day six. I do agree that you have to do some prep if you don't want to feel like you are spending all your time cooking. I have been making sure that anything I make is good for multiple meals. I made a pot roast that I ate for three days. I made taco meat today that I can turn into taco salads, and I had one today and plan to have another tomorrow. I sauteed some onions and peppers to have on hand and also roasted a spaghetti squash today. And tomorrow, I want to go get some zucchini because I bought a thing on Amazon to make them into "zoodles."
My biggest challenge so far has been beverages because I usually drink several liters of Crystal Lite everyday, as well as plenty of diet soda. I don't drink coffee or tea (or at least tea that has not been sweetened), so I ended up giving up caffeine cold turkey, which was less than ideal, but I feel pretty good now!
Phoenix those are all great meal prep ideas! Thanks for the suggestions. I've heard that giving up caffeine as part of this process is easy bc you get so much steady energy from the foods you're eating.
I typically only have coffee in the morning and then water all day so I don't think that will be a big challenge.
I ate my salad at 12:30 and it's 3 on the west coast. I already feel hungry again and wish I has brought some nuts and fruit. It will be 3 hours before dinner.
