I'm still staying compliant as much as possible. My energy in the afternoons has been much better and I like the way I'm feeling. That and I don't mind the weight loss. I had a few non-compliant things over the weekend and I really didn't feel great.
I now really enjoy summer squash and zucchini, which I never really ate before. I still need to try spaghetti squash.
We are doing good. There was a lot of ice cream talk last night. It was 90 degrees yesterday and a perfect evening for ice cream. But we didn't. Even though we talk about having these yummy things, we also talk about how we don't want to go back to our old ways p, because we are both feeling so good!

Today is day seven!
I have been using a lot of coconut oil in cooking, which I was not initially a fan of because it did lend a little hint of coconut flavor to everything, but I have gotten used to it. I also had not really ever steered outside of the peanut butter realm and find myself REALLY enjoying cashew butter now!
Today is day 2. I am really feeling the lack of caffeine this morning - I just cannot make myself drink black coffee, and tea is not really doing the trick.
I did a good amount of prep cooking last night, so I feel more prepared now. I made a big pot of chili (I'm from Texas, so no beans is normal to me, lol) that I'd been craving even though it's still hot here. DH laughed at me because I ate it with a side of roasted asparagus, but it just looked good when I was at the store, so I bought it.
I did spend a ton on groceries yesterday, though, and I don't think they will last all that long.

I pretty much ate everything before so not much is new. I did try light coconut milk in my coffee with cinnamon and it wasn't so bad. I wont have it everyday, but on the weekends when we make our own coffee at home, its pretty good. I am also loving sparkling water way more than I thought I would, trying out with different citrus squeezed in and its been so hot lately that its a nice refreshment!

I really dislike coconut, so coconut milk is out for me. I've tried it with almond milk in the past, and I wasn't really a fan. I may try it again if I get desperate, but making my own almond milk is not going to happen in the next few days. I probably need to wean off of some of the caffeine, to be honest. I did drink a second cup of green tea this morning to get me through, though.

Fair enough. It took me a little while to start really enjoying black coffee. I had to experiment with different types and roasts.
Today is day two for me. I feel a lot less bloat, but also some digestive issues that are probably related to the sudden increase in veggies and fiber. My wedding ring fits nice and loose today.
I had two scrambled eggs and spinach and mushrooms for breakfast. I packed spaghetti squash with fresh tomato sauce for lunch and some fruit and almonds for a snack. Tonight I will try out cauliflower rice to go with the Asian meatballs I already made this weekend.
