DS is 2.5 and we've used Dr Bronner's baby-mild liquid soap on his hair and body his whole life. We use the same thing on our bodies, and in foaming pump dispensers for bathroom hand washing. Great product, organic, fair-trade, animal-cruelty free, minimal ingredients.

I still use Aveeno baby shampoo on my five year old most of the time, so I think you're fine :-)
But if you want to switch, he's probably old enough for whatever you want. I like to use something tear free to wash my DD1's face, but I'll use any shampoo on her and any soap. If she's in my shower, I use Dove bar soap
We buy soaps from our farmers's market that have a little toy animal inside. DD is super motivated to get good and clean so she can "release" the animal sooner. I forget what the soap itself is made from.
We started using these when she was around 2.5 or so. We even brought a big stash of them to France with us!
Also, FWIW, I think baby soap is plenty "strong." I used Burt's Bees myself the whole time I was pregnant because it was the only soap fragrance that I could stand.
